Ladies and gentlemen, may I present the Vegan Tupacookie aka Tupapipari:

2 cups sugar
1 ½ cup maple syrup
1 cup of water
200 g margarine
½ tablespoon of cinnamon
½ tablespoon of ginger
1 teaspoon of bitter orange peel
2 teaspoons soda
approximately 1 l of wheat flour

Boil sugar, syrup, water and spices. Measure the margarine into a bowl and pour the hot sugar mixture over it. Stir until the margarine has melted. Allow the mixture to cool. Stir in flour, soda, and add the dough. Stir until smooth and let it rest overnight in the cold. Roll the dough out flat and cut to desired shapes. Bake at 175 degrees for about 10-15 minutes, until the gingerbread is a beautiful color.

The icing is very simple to make. Just add a few tablespoons of water to a cup of icing sugar and stir.
A minigrip bag is a handy tool for decorating. Pour the icing in the bag, make a small hole in one of the corners and voilà!
