although i realize evanston is quite a ways north for most people, if you're up in that area or looking for a good vegetarian restaurant that isn't chicago diner (yuck), blind faith is the best.
they have meals that will suit any diet - vegetarian, vegan, even macrobiotic. they can do wonderful things with seitan (the seitan marsala and seitan fajitas are two of my favorites). delicious baked goods as well.
a bit on the expensive side, but well worth it.
